Coconut Peanut Butter Scotcheroos
Healthy, high in protein, chewy, crispy peanut butter bars are spread with white chocolate and butterscotch for a new healthy treat.
Ingredients
2 cups Puffed Rice
1/4 cup melted dark chocolate
1/2 cup nuts-n-more coconut peanut butter
1 scoop Vanilla Whey Protein
1 1/2 cups melted white chocolate
Method
Step 1
Line a baking pan with parchment and spray coconut oil.
Step 2
In a bowl combine together puffed rice, nuts-n-more coconut peanut butter, nuts-n-more Vanilla Whey Protein and dark chocolate.
Step 3
Transfer the rice mixture to the baking dish and press the mixture firmly and evenly into the pan.
Step 4
Freeze for 20 minutes.
Step 5
Pour the white chocolate over the coconut rice bars: Use a spatula to scrape every last bit of melted chocolate onto the bars. Smooth into an even layer with the back of the spatula.
Step 6
Freeze for 30 minutes or until white chocolate sets.
Step 7
Remove from freezer and cut into individual bars.
