Dieters Bacon Ranch Stuffed Baked Potatoes
4 russet potatoes
1small onion chopped
10 ounces broccoli chopped
1/2 cup calorie free #WaldenFarms Bacon Ranch Salad Drsg
1 Tbsp olive oil
2 tsp dried parsley
Salt and pepper to taste
Oven 425 F. Microwave pierced potatoes 12 min; bake 15 min
Scoop out pulp and mash in bowl.
Heat skillet on medium heat with Pam spray, add onion and sauté till tender about 5 min. Add onion to broccoli and salad drsg, then to potatoe pulp and mix well.
Brush outside of potatoe skins with olive oil
Spoon Potatoe mix into shells and place on baking sheet and bake 15 min.
Sprinkle with parsley, salt and pepper to taste.
Enjoy! These also keep in the fridge for up to 3 days. Just reheat in microwave for 5 min
