Chicken Souvlaki & Tzatziki
Chicken marinade
1/4 c olive oil
2tbsp lemon juice
1 tsp oregano
1/2 tsp salt
Coat chicken and marinate 2-5 hrs
Cook as desired. Best cubed and added to skewer and BBQ'd
Tzatziki
One 6 ounce container nonfat plain Greek Yogurt
1/2 cucumber peeled and grated
2 tsp white vinegar or lemon juice
1 clove garlic chopped
1 pinch salt
2 tsp dry dill or 1 small pkg chopped fresh dill
Mixed together and refrigerate 1-2 hrs
Serve chicken with rice and Greek salad or make pita
