- 1 1⁄2cups wheat bran
- 1 cup nonfat milk
- 1⁄2cup unsweetened applesauce
- 1 egg
- 1/3 cup brown sugar
- 1/3 cup Splenda
- 1⁄2teaspoon vanilla extract
- 1cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2teaspoon salt
- 1 cup blueberries
DIRECTIONS
- Preheat oven to 375 degrees.
- Grease muffin cups or use paper muffin liners.
- In a large bowl, mix together wet ingredients then add dry ingredients
- Fold in blueberries.
- Scoop into muffin cups.
- Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
